Chicken breast with skin gives the dish more flavor. Kale is a nice resource of vegetable and lacinato kale mixed in the potato hash with onion and green apple gives the hash more texture. The hash has simple ingredients but the flavor is so good. Beside the sweetness of apple and the onions, a little bit of bite and tang from whole grain dijon complete the dish! It becomes one of my favorite condiment.

  • 2 Airline Chicken Breasts
  • 10 Ounces Purple Potatoes
  • 1 Bunch Lacinato Kale
  • 1 Granny Smith Apple
  • 1 Red Onion
  • 1 Bunch Tarragon
  • 3 Tablespoons Chicken Demi-Glace
  • 2 Tablespoons Butter
  • 2 Tablespoons Sliced Almonds
  • 2 Teaspoons Whole Grain Dijon Mustard
